VEGAN STRAWBERRY COCONUT PORRIDGE

My favorite #brekkie recipe

Ingredients for two portions:

  • 7 tbsp Oats
  • 4 tbsp Chia Seeds
  • ½ Mug of Coconut Milk
  • 1-2 tbsp of Coconut Flakes
  • 1 Banana
  • Strawberries or other berries
  • ½ Mug of drinking water
  • Cinnamon
  • Almonds
  • Goji berries

With those of you who need a bit more than just fruits in the morning I want to share one of my favorite porridge recipes. But first let’s take a look at the health benefits oats offer:

Oats are high in fiber and protein, lower cholesterol, prevent heart disease and boost serotonin (a monoamine neurotransmitter which is popularly thought to be a contributor to feelings of well-being and happiness). As porridge is digested slowly it helps to keep you full for longer and might be the most desirable way to start your day.

This recipe is 100% vegan, but you can change the ingredients just as you like, of which more later.

To start smash the banana in a bowl and add oats, chia seeds, coconut flakes (keep some for topping) and as much cinnamon powder as you like. Now add the coconut milk and water and stir well. You can let this soak for around 10 minutes.

If it’s difficult to find coconut milk you can also use yoghurt, for example strawberry yoghurt. Instead of water feel free to use cow milk.

In the meantime chop a hand full of strawberries and put half of it in each final bowl.

Let’s check on the porridge: Does it have a nice texture and is not too thin nor too thick? In case it seems to be too thick, add some more water/cow milk and stir again. If it’s too thin, add some more oats. Add as much as needed to give it a nice texture. Now pour it in the bowls and you can start with the finishing.

Add another strawberry on top, add goji berries and almonds and finally sprinkle some coconut flakes. Enjoy!
