Working in the tourism industry means you barely have time for your meals. This fruity breakfast/afternoon bowl will prevent you from mental hangovers and refill your energy whatever your plans are. It’s easy and quickly prepared and if you don’t have the time to eat at home you can bring it as a snack for university, work or to your surf session.
Ingredients for two portions:
150ml rice milk (alternatives are almond or coconut milk)
3 ripe bananas
5-6 passion fruits or 50g passion fruit pulp from the health shop
2 handful of walnuts
1 tbsp Matcha powder
Oats, Chia seeds, Coconut flakes, more walnuts
Bananas will grant fast sugar supply for energy and walnuts provide neuroprotective compounds, which are good for brain and metabolism activity – including vitamin E, folate, melatonin, omega-3 fats and antioxidants. The rice milk is one of the tastiest alternatives for cow milk. Also most alternative herb/plant milks are produced in Europe which helps you to buy “local” and fair.
The passion fruits are a tasty extra and content Potassium, Vitamin A and Vitamin C. The Matcha powder – which is a special kind of green tea – gives you a little caffeine kick and helps to hold your energy levels high.
Put 2 bananas, the rice milk, the matcha powder and 2 handful of walnuts into the kitchen machine and blend them until they have reached a creamy consistence. Put the mixture in your favourite bowl, slice the last banana and top your fruity bowl with oats, chia, walnuts, banana slices and a bit of matcha powder. I recommend to stick with nuts and no other fruits than bananas or more passionfruit to prevent yourself from a taste overkill. But now lean back and enjoy your fruity bowl. Happy Humpday!
